I have been making this recipe for a few years now. It always goes down well at BBQ’s (sorry might be a bit late posting this for UK readers!) and is easy to make.
New Potatoes – about 750g quartered and boiled for 8-10 minutes till soft but not too soft as you don’t want it to go mushy – cool them in the fridge for at least half an hour as it’s easier to mix when cold
2 x cooked rashers of bacon chopped
2 x hard boiled eggs
English Mustard – about a teaspoon
1/2 teaspoon Paprika
Majoram – This is fine to omit
2 x Spring onion sliced finely
Pinch of sugar
1. Mash the 2 boiled eggs in a bowl
2. Add a few tablespoons of mayonnaise, the mustard, paprika, sugar and seasoning. Also a sprinkling of Majoram if using. Mix and taste, add any extra seasoning as you see fit.
Mix the rest of the ingredients in and taste. Then I’ll think you’ll find you have a scrummy potato salad!
Serve with a smorgasbord full BBQ chicken, meat and the obligatory burnt sausages….
