I love a good ol' baked potato with lots of butter, baked beans and oozing melted cheese but my stomach differs in that opinion. I have missed it so and with all the low carb and gluten free diet I have been 'trying' to work on the sweet potato has been playing a massive part. Here are just a few toppings I have been experimenting with.
Bean Chili - find my recipe here
Ricotta - 4 tablespoons
Squeeze lemon juice
Grating of nutmeg, around 1/2 teaspoon
Cinnamon - 1/4 teaspoon
Natural or Greek Yoghurt - 4 tablespoons
Parmesan - 10g grated
Lemon rind and juice 1/3 of lemon
Garlic Salt - 1/2 teaspoon
2 x Spring onion chopped
Preheat oven to gas mark 6, 200 degrees.
Prick the potato and pop in the oven for around 45 minutes or until cooked.
To make topping's 2 and 3 mix the ingredients together for each recipe.
Slit the potato(s) in a cross on the top and stuff with the topping. The 3 bean chilli and yoghurt topping go well together if you fancy indulging...
